WHY WE LOVE THIS RECIPE

I think some people are intimidated by meatloaf, but it couldn’t be easier. You just grab a spoon, mix everything up in a bowl, make a loaf, or in this case, mini loaves, and bake! Seriously, it’s THAT easy. It makes the perfect dinner option, and it’s fabulous comfort food. Now…these mini loaves….I think I could eat them every day! They are full of flavor and perfect anytime. Most of the time when I make meatloaf, I serve it with mashed potatoes and green beans. It’s just a fabulous comfort food meal, and it comes together so quickly.

How to Use Ground Turkey in Mini BBQ Cheddar Meatloaves

My husband has Alpha-Gal, which means he has an allergy to red meat. So I make all our ground beef recipes using mostly ground turkey. It’s an easy swap! Since turkey is naturally leaner and milder in flavor, you’ll want to be a little more generous with the seasonings to give it the same rich, savory taste. Don’t worry about measuring every extra pinch perfectly; ground turkey is very forgiving, so feel free to season it to your taste. A little extra minced garlic, onion powder, liquid smoke, and BBQ sauce can make all the difference. The result is still a moist, delicious meatloaf with plenty of flavor.

Of course, as I mentioned above, I love it with green beans and mashed potatoes!

Ingredients
  

  • 2 lbs of lean ground beef
  • 1 1/2 cups of shredded sharp cheddar cheese
  • 1 cup of quick minute oats
  • 1 large egg
  • 1 teaspoon of onion powder
  • 1 teaspoon of salt
  • 2 teaspoons of minced garlic
  • 1 teaspoon of Worcestershire sauce
  • 1 teaspoon of liquid smoke
  • 1 teaspoon of yellow mustard
  • ½ cup of tomato sauce
  • 1 cup of your favorite BBQ sauce

Instructions
 

  • Preheat the oven to 425. In a large bowl, combine all the ingredients except the BBQ sauce. Pat out 8 mini rectangular loaves and place on a greased baking sheet. Drizzle BBQ sauce on top of each one. Bake for 25-28 minutes.
