Pasta Salads Are So Simple
In the summer time when the temperatures soar, a chilled pasta salad really hits the spot! However, a good pasta salad isn’t just for the summer. They really make a great side dish for any holiday, gathering, or weeknight dinner. Plus, they come together quickly and are very simple. Most of the time, boiling the pasta or chopping the ingredients is what takes the longest when preparing a pasta salad. Seriously…easy peasy! This artichoke and pea macaroni salad is no exception. It’s full of flavor and definitely a family favorite!
KEY INGREDIENTS
- Elbow macaroni pasta
- Can of artichokes, chopped
- Frozen Peas
- Chopped roasted red peppers
- Chopped green onions
- For the Dressing:
- Mayonnaise ( we use Duke’s)
- Juice from one large lemon
- Dijon Mustard
- Minced garlic
- Salt
- Pepper

Artichoke and Pea Macaroni Salad
Ingredients
- 2 cups of elbow macaroni pasta
- 1 (13.7 ounce can) of artichokes, chopped about 1.5 cups
- 1 1/2 cups of frozen Peas
- ⅔ cup of chopped roasted red peppers
- ⅓ cup of chopped green onions
For the Dressing:
- ½ cup of mayonnaise we use Duke’s
- Juice from one large lemon
- 2 Tbs Dijon Mustard
- 1 teaspoon of minced garlic
- 1 teaspoon of salt
- ½ -1 teaspoon of pepper
Instructions
- Cook pasta according to directions and then drain.
- Place in a large bowl and mix in artichokes, peas, peppers and onions. Place in refrigerator and make up the dressing. For the dressing, mix all ingredients together, pour over pasta, mix together and serve.
