Artichoke and Pea Macaroni Salad

Ingredients
  

  • 2 cups of elbow macaroni pasta
  • 1 (13.7 ounce can) of artichokes, chopped about 1.5 cups
  • 1 1/2 cups of frozen Peas
  • cup of chopped roasted red peppers
  • cup of chopped green onions

For the Dressing:

  • ½ cup of mayonnaise we use Duke’s
  • Juice from one large lemon
  • 2 Tbs Dijon Mustard
  • 1 teaspoon of minced garlic
  • 1 teaspoon of salt
  • ½ -1 teaspoon of pepper

Instructions
 

  • Cook pasta according to directions and then drain.
  • Place in a large bowl and mix in artichokes, peas, peppers and onions. Place in refrigerator and make up the dressing. For the dressing, mix all ingredients together, pour over pasta, mix together and serve.
