1(13.7 ounce can) of artichokes, choppedabout 1.5 cups
1 1/2cupsof frozen Peas
⅔cupof chopped roasted red peppers
⅓cupof chopped green onions
For the Dressing:
½cupof mayonnaisewe use Duke’s
Juice from one large lemon
2TbsDijon Mustard
1teaspoonof minced garlic
1teaspoonof salt
½ -1teaspoonof pepper
Instructions
Cook pasta according to directions and then drain.
Place in a large bowl and mix in artichokes, peas, peppers and onions. Place in refrigerator and make up the dressing. For the dressing, mix all ingredients together, pour over pasta, mix together and serve.
