These simple pumpkin chip cookies are perfect for the fall season! We promise you can’t eat just one.

Easy Fall Cookie Recipe
Every fall, Nestlé Toll House releases pumpkin spice chips. They are delicious! We decided to make cookies with them, and we were not disappointed. We used our favorite chocolate chip cookie recipe, simply substituting a few ingredients. These cookies come together quickly, and we promise, they will be a hit! I have to make myself stop eating them. Ha!
KEY INGREDIENTS
- butter, softened
- sugar
- Eggs
- Brown sugar
- Vanilla flavoring
- All-purpose flour
- Salt
- Baking soda
- Pumpkin spice chips (we use Nestle Toll House)
- Walnuts (optional) chopped
- Cinnamon (optional)

Pumpkin Chip Cookies
Ingredients
- 2 sticks butter softened 1 cup
- 3/4 cup sugar
- 2 eggs
- 1 1/4 cups brown sugar
- 1 tablespoon vanilla flavoring
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 cups pumpkin spice chips we use Nestle Toll House pumpkin spice chips
- 1 cup walnuts optional chopped
- Cinnamon optional
Instructions
- Cream butter, sugar, eggs and vanilla until well mixed. Add baking soda, salt and flour and continue mixing. Fold in chips and nuts.
- Drop by spoonfuls onto an ungreased cookie sheet. Sprinkle the top with a little cinnamon. Bake in preheated 325 degree oven for 12 – 15 minutes. Makes about 3 1/2 dozen depending on the size you make the cookies
