Ingredients

  • 1 Box of White Cake Mix (plus the ingredients listed on the box to make the cake
  • 1 3-ounce box of Raspberry Jello gelatin
  • 2 cups of hot water
  • 1 10-ounce jar of Raspberry preserves (we used seedless, but you don’t have to)
  • 1 8-ounce tub of Cool Whip
  • 2 cups of shredded sweetened coconut

Instructions

  • Bake the cake according to the directions on the box. Once the cake is baked, let it cool for 15-20 minutes. Poke holes all through the cake, about every inch or so (we used the handle of a wooden spoon). Mix the gelatin and the hot water in a small bowl and pour over the cake.
  • Warm the preserves in the microwave for a few seconds (15-20) to make it easy to spread and spread it over the cake. Place in the fridge for at least 2 hours.
  • Then spread with Cool Whip on top and sprinkle with coconut. This cake improves with time, so it can be easily made a day or so in advance. Keep in the refrigerator.
