Easy Cashew Cookies
These easy cashew cookies are so flavorful. Then, we add a simple coffee icing that takes them to a new level!

We found this recipe for cashew cookies years ago in an old Junior League cookbook. It’s not often that you see desserts made with cashews! These cookies are very simple to prepare. They are made with your basic cookie ingredients and come together quickly. They are soft and full of flavor. We added a delicious coffee icing and let me tell you….it was a great addition. You’ll often see cookies or sweets made with pecans or peanuts, but I encourage you to try cashews from time to time. They really are fabulous and add a wonderful taste to these cookies!
KEY INGREDIENTS
- All-purpose flour
- Baking powder
- Baking soda
- Salt
- Butter, softened
- Brown sugar
- Egg
- Vanilla extract
- Sour cream
- Chopped cashews
- Hot black coffee
- Powdered sugar
It takes very little effort to make these cookies! You basically just mix and then roll them into balls and bake. They are fantastic on their own, but if you want to take them over the top, add the coffee icing!

TIP
Just chop the cashews with a knife. This way, you will have small pieces of cashews in the cookies. It gives the cookie a great texture!

Easy Cashew Cookies
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 stick butter or 1/2 cup softened
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 2 cups chopped cashews
Coffee Icing Ingredients
- 1/4 cup butter or 4 ounces
- 3 tablespoons hot black coffee
- 1/2 teaspoon vanilla extract
- 2 cups powdered sugar
Instructions
- Whisk together flour, baking powder, baking soda and salt. Set aside. Combine butter, brown sugar, egg, vanilla and sour cream. Mix together with mixer. Add dry mixture to wet ingredients and continue mixing. Fold in chopped cashews with spoon.
- Pull off and roll pieces of the cookie dough into balls about the size of a walnut with floured hands. Place on ungreased cookie sheet and flatten with a fork or your hands. Bake in preheated 400 degree oven 8 to 10 minutes. Remove, let cool and add icing below. Makes 2 1/2 to 3 dozen cookies.
Coffee Icing Instructions:
- Heat butter and coffee on stove or in microwave. Add vanilla and powdered sugar. Mix with spoon or mixer. Spread on cooled cookies.

Hi! You could use any frosting that you like. This maple frosting on our sister site would be fabulous. They would be great with cream cheese frosting or just simply leave the frosting off.
