Iron Skillet Oatmeal Cookie
This iron skillet oatmeal cookie is full of cinnamon, butter, and chocolate chips. It is soft, chewy, and perfect for a small group.

Oatmeal cookies are pure comfort, and this iron skillet oatmeal cookie is exactly that! Served warm with a scoop of ice cream…I’m telling you, you’re gonna love it. It takes nothing to make this delicious dessert, and it’s wonderful for a small group or gathering. You can easily cut this cookie into slices or just spoon it out of the skillet into a bowl. However you choose to eat it, it’s fabulous!
SWAPS
-You can easily add raisins or nuts to this cookie. Don’t like chocolate? Just leave them out. This would be great with a powdered sugar glaze instead of a chocolate glaze. You can make this treat exactly as you wish.

Iron Skillet Oatmeal Cookie
Ingredients
- 1 cup butter or 2 sticks softened
- 1 cup brown sugar
- 1/2 cup white granulated sugar
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/4 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 1/2 cups rolled oats
- 1 cup chocolate chips
Topping
- vanilla ice cream
- chocolate syrup
Instructions
- Beat together butter, brown sugar, white sugar, vanilla extract and eggs until creamy using a mixer. Whisk together flour, baking soda, cinnamon and salt.
- Combine flour mixture with butter and eggs and continue mixing. Stir in oats and chocolate chips with a spoon.
- Press evenly into a sprayed 12 inch skillet. Bake in a preheated 355 degree oven for 30 to 35 minutes.
