Honey Mustard Smashed Potatoes
These honey mustard smashed potatoes will quickly become a favorite! Crispy on the outside, soft on the inside, glazed with herbs and butter and served with a delicious homemade honey mustard sauce.

WHY THIS RECIPE IS SO EASY
We’ve never met a potato recipe we didn’t love and smashing them is definitely a favorite! One thing that’s great about smashed potatoes is they are so simple to prepare and they pack a real punch in the flavor department. First, you don’t have to peel the potatoes and second, you just boil and bake. That’s it! In just a few easy steps, you’ll have a delicious side dish or appetizer. Oh and the honey mustard dipping sauce, that takes about one minute to prepare. Win! Win!
KEY INGREDIENTS
- Yellow or red potatoes
- Butter, melted
- Olive oil
- Chopped parsley
- Salt and Pepper
- Mayonnaise
- Dijon mustard
- Honey
- Apple Cider Vinegar
- Smoked Paprika
- cayenne, optional
TIPS
You can easily swap our the parsley for cilantro, dill, basil, or chives. Feel free to add onion powder or even a little parmesan cheese. Not a fan of honey mustard? Dip them in this homemade ranch dressing.

Honey Mustard Smashed Potatoes
Ingredients
- 1.5-2 pounds of yellow or red potatoes
- 1 tablespoon butter melted
- 1 tablespoons of olive oil
- 1/4 cup of chopped parsley
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
Honey Mustard Sauce Ingredients
- 2 tablespoons of Mayonnaise
- 2-3 tablespoons of dijon mustard
- 1-2 teaspoons of honey
- 1/2 teaspoon garlic powder
- 1/4 teaspoon of Apple Cider Vinegar
- 1/4 teaspoon of Smoked Paprika
- Salt and Pepper
- optional a pinch of red pepper or cayenne
Instructions
- Boil the potatoes in water for 20 minutes or until they are tender when tested with a fork (do not peel the potatoes). Drain the water and then place the potatoes on a baking sheet. Mix together the butter, olive oil, parsley, garlic powder, salt, and pepper and pour over the potatoes. Be sure to cover the entire potatoes with the sauce.
- Using a coffee mug or thick glass, smash the potatoes. Preheat oven to 400—place in the oven for 15 minutes. Turn the potatoes over and then back for another 15-20 minutes. You want the potatoes a little crispy on the outside but still soft in the middle.
Honey Mustard Sauce Directions
- Mix all the ingredients together for the honey mustard sauce and use it for dipping the potatoes.
Notes
HOW TO STORE
Keep leftover in the fridge for 2-3 days. The honey mustard sauce will keep for a week.
