Honey Mustard Smashed Potatoes are so simple! Potatoes baked in a simple herb glaze and with a delicious honey mustard dipping sauce. So good!

Ingredients
  

  • 1.5-2 pounds of yellow or red potatoes
  • 1 tablespoon butter melted
  • 1 tablespoons of olive oil
  • 1/4 cup of chopped parsley
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper

Honey Mustard Sauce Ingredients

  • 2 tablespoons of Mayonnaise
  • 2-3 tablespoons of dijon mustard
  • 1-2 teaspoons of honey
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon of Apple Cider Vinegar
  • 1/4 teaspoon of Smoked Paprika
  • Salt and Pepper
  • optional a pinch of red pepper or cayenne

Instructions
 

  • Boil the potatoes in water for 20 minutes or until they are tender when tested with a fork (do not peel the potatoes). Drain the water and then place the potatoes on a baking sheet. Mix together the butter, olive oil, parsley, garlic powder, salt, and pepper and pour over the potatoes. Be sure to cover the entire potatoes with the sauce.
  • Using a coffee mug or thick glass, smash the potatoes. Preheat oven to 400—place in the oven for 15 minutes. Turn the potatoes over and then back for another 15-20 minutes. You want the potatoes a little crispy on the outside but still soft in the middle.

Honey Mustard Sauce Directions

  • Mix all the ingredients together for the honey mustard sauce and use it for dipping the potatoes.

Notes

Once you mix the sauce together, be sure to taste it. You may want to add more mustard or honey, to get the flavor you want.
