Chicken Curry Salad is a Favorite
Chicken salad is so simple and versatile. You can add many different spices and herbs (like this pickle chicken salad recipe), and with this recipe….we added curry. You’re gonna love the flavor it adds. The curry with the craisins and pecans….it’s DELICIOUS! This recipe comes together so quickly and makes an excellent sandwich for lunch or dinner. You could also easily eat it with crackers or on a bed of lettuce.

Chicken Curry Salad
Ingredients
- 2 cups of diced cooked chicken
- 1 red apple chopped (do not peel)
- 3/4 cup of dried cranberries
- 1/2 cup of thinly sliced celery
- 1/4 cup of chopped pecans
- 3/4 cup of mayonnaise
- 2 teaspoons of lime juice
- 1 teaspoon of Dijon mustard
- 1 1/2-2 teaspoons of curry
- Bread and lettuce
Instructions
- In a medium bowl, combine chicken, apple, cranberries, celery, and pecans. In a smaller bowl, mix the mayonnaise, lime juice, mustard, and curry.
- Pour the mixture over the chicken and mix. Refrigerate for 1-2 hours so the flavors can meld. Serve on bread with butter lettuce.
