Ingredients

of diced cooked chicken

red apple
chopped (do not peel)

of dried cranberries
1/2
cup
of thinly sliced celery
1/4

of chopped pecans
3/4
cup
of mayonnaise

teaspoons
of lime juice
1
teaspoon
of Dijon mustard
1 1/2-2
teaspoons
of curry
Bread and lettuce
Instructions
In a medium bowl, combine chicken, apple, cranberries, celery, and pecans. In a smaller bowl, mix the mayonnaise, lime juice, mustard, and curry.
Pour the mixture over the chicken and mix. Refrigerate for 1-2 hours so the flavors can meld. Serve on bread with butter lettuce.
Notes
This will make around four sandwiches.
