Ingredients
  

  • 2 cups of diced cooked chicken
  • 1 red apple chopped (do not peel)
  • 3/4 cup of dried cranberries
  • 1/2 cup of thinly sliced celery
  • 1/4 cup of chopped pecans
  • 3/4 cup of mayonnaise
  • 2 teaspoons of lime juice
  • 1 teaspoon of Dijon mustard
  • 1 1/2-2 teaspoons of curry
  • Bread and lettuce

Instructions
 

  • In a medium bowl, combine chicken, apple, cranberries, celery, and pecans. In a smaller bowl, mix the mayonnaise, lime juice, mustard, and curry.
  • Pour the mixture over the chicken and mix. Refrigerate for 1-2 hours so the flavors can meld. Serve on bread with butter lettuce.

Notes

This will make around four sandwiches.
