A Simple Side Dish Recipe

We love an easy recipe, and you won’t believe how quickly this one comes together. It starts with a delicious sauce made from just a few ingredients that adds wonderful flavor. We love the addition of green chilies, black beans, and cilantro. You’re gonna love the Mexican twist this easy coleslaw offers. Oh, and this dish is so versatile. You can easily swap out the beans, the peppers, etc. You can really make it your own! You may also enjoy this southwestern pasta salad or deviled egg potato salad.

Ingredients
  

Sauce

  • 1 cup of mayonnaise
  • 2/3 cup of Greek yogurt
  • 3 tablespoons of lime juice
  • 2 tablespoons of taco seasoning

Salad

  • 16 ounce bag of coleslaw
  • 1 cup of diced sweet bell peppers
  • 4- ounce can of green chiles drained
  • 15- ounce can of sweet corn drained
  • 15- ounce can of black beans or pinto beans rinsed and drained.
  • chopped cilantro optional

Instructions
 

  • In a large bowl, mix the sauce ingredients together. Then add the salad ingredients and toss well. Chill in the refrigerator for at least 1 hour before serving. This can easily be made a day or two in advance.

Notes

  • You can easily make swaps with this dish. If you don’t like black beans, you could use pinto beans. Don’t like green chilies? Simply leave them out.ย 
  • Instead of sweet corn, you could easily use a can of Mexi Corn.ย 
  • Want a bit of heat? Add a few jalapenos
  • You can also make your own taco seasoning.ย 
Store leftovers in an airtight container in the fridge. They will keep 3-4 days.
