Mexican Coleslaw

Ingredients
  

Sauce

  • 1 cup of mayonnaise
  • 2/3 cup of Greek yogurt
  • 3 tablespoons of lime juice
  • 2 tablespoons of taco seasoning

Salad

  • 16 ounce bag of coleslaw
  • 1 cup of diced sweet bell peppers
  • 4- ounce can of green chiles drained
  • 15- ounce can of sweet corn drained
  • 15- ounce can of black beans or pinto beans rinsed and drained.
  • chopped cilantro optional

Instructions
 

  • In a large bowl, mix the sauce ingredients together. Then add the salad ingredients and toss well. Chill in the refrigerator for at least 1 hour before serving. This can easily be made a day or two in advance.

Notes

  • You can easily make swaps with this dish. If you don't like black beans, you could use pinto beans. Don't like green chilies? Simply leave them out. 
  • Instead of sweet corn, you could easily use a can of Mexi Corn. 
  • Want a bit of heat? Add a few jalapenos
  • You can also make your own taco seasoning
Store leftovers in an airtight container in the fridge. They will keep 3-4 days.
