WHY WE LOVE THESE SIMPLE EASTER CUPCAKES
No matter what you decide to prepare for Easter Sunday, more than likely, a dessert will be involved! From delicious cakes, pies, treats, and cookies…you’ll see it all! This is a super easy hack for an adorable Easter treat that will for sure leave your guests smiling. You won’t believe it, but you just take a package of store-bought iced cupcakes and spruce it up with a few simple ingredients. They come together in minutes and will add an adorable charm to your dessert table. We love making these simple bird’s nest cupcakes because they always receive rave reviews, and they are just so simple! They would be perfect for any Easter gathering.
KEY INGREDIENTS
- Store-bought vanilla frosted cupcakes (you’ll find these in the bakery section of your grocery store)
- Sweetened flaked coconut, toasted
- Bag of Mini Cadburgy Eggs
- Package of Peeps Bunnies
HOW TO MAKE
- We like to toast the coconut, but you don’t have to. However, it just takes a few minutes and adds a deeper flavor.
- We try to find plain white frosted cupcakes but sometimes they can be hard to find. If they have sprinkles, no big deal! Just take a knife and remove a thin layer of the frosting from the top, removing the sprinkles. If you don’t get them all, it’s OK; they will just mix in with the frosting and be hidden by the coconut. Then, just smooth the frosting out and make the top a bit flat.
- Sprinkle your coconut all over the frosting.
- Take your bunny Peep, cut it right below the nose with scissors, and discard the bottom part of the Peep. Place it in the middle of your cupcake and press down a bit so it will stick. Then, place two mini eggs in front of the bunny.

GET CREATIVE
Feel free to get creative with these cupcakes. We’ve also made them with white frosted chocolate cupcakes! We’ve used small chocolate bunnies and pastel M&Ms. These little treats are easy and very versatile.

I used a cake mix and instead of coconut, which my family does not like, I used Spring sprinkles. Cute!
