KEY INGREDIENTS
- Butter
- White sugar
- Brown sugar
- Evaporated milk
- Eggs
- All-purpose flour
- Cornmeal
- Vanilla extract
- Salt
- Nutmeg
- 1 unbaked 9-inch pie shell
Sometimes, we make a homemade crust, as you can see with this caramel chess pie, but you can certainly just use an unbaked premade pie shell. If you want to prepare your own crust, here is a recipe.

TIPS
If you don’t have evaporated milk, you can use 2%. You can also add in the spices you enjoy. If you dislike nutmeg, leave it out or replace it with cinnamon or Allspice.

Caramel Chess Pie
Ingredients
- 1/2 cup of butter
- 1.5 cups of white sugar
- 1/2 cup of brown sugar
- 1/2 cup of evaporated milk
- 4 eggs
- 1/4 th cup of all-purpose flour
- 1.5 teaspoons of cornmeal
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
- 1/4 teaspoon of nutmeg
- 1 unbaked 9-inch pie shell
Instructions
- Preheat oven to 400 degrees. In a medium saucepan, heat butter, both of the sugars, evaporated milk, flour, and cornmeal over medium heat. Continuously stir until the butter and the sugar are both dissolved. Remove from heat, pour into a bowl, and let it cool some.
- In a separate bowl, whisk eggs, vanilla, salt and nutmeg together. Slowly add in the butter mixture into the eggs, this will keep the eggs from curdling, then combine the two. Pour into pie shell and bake 10 minutes on 400 and reduce temperature to 325 and bake for 32-35 minutes. Checking for doneness. We love it topped with whipped cream.

Can you leave out the cornmeal or use a substitute?
Hi! Honestly, I would not leave it out or substitute anything. This is what gives a chess pie it’s velvety texture and actually makes it a chess pie. Thanks!
