Ingredients

  • 1/2 cup of butter
  • 1.5 cups of white sugar
  • 1/2 cup of brown sugar
  • 1/2 cup of evaporated milk
  • 4 eggs
  • 1/4 th cup of all-purpose flour
  • 1.5 teaspoons of cornmeal
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of nutmeg
  • 1 unbaked 9-inch pie shell

Instructions

  • Preheat oven to 400 degrees. In a medium saucepan, heat butter, both of the sugars, evaporated milk, flour, and cornmeal over medium heat. Continuously stir until the butter and the sugar are both dissolved. Remove from heat, pour into a bowl, and let it cool some.
  • In a separate bowl, whisk eggs, vanilla, salt and nutmeg together. Slowly add in the butter mixture into the eggs, this will keep the eggs from curdling, then combine the two. Pour into pie shell and bake 10 minutes on 400 and reduce temperature to 325 and bake for 32-35 minutes. Checking for doneness. We love it topped with whipped cream.
