A SIMPLE AND DELICIOUS DESSERT

It’s no secret we love an easy recipe here at Front Porch Life! These key lime coconut macaroons are precisely that. They take little to no time to prepare, and you only need to bake them for about 12 minutes or so, and you’re set. They are the perfect sweet treat for a spring wedding shower, baby shower, St. Patrick’s Day, or Easter. Honestly, they are a good idea anytime, and they look so pretty on a dessert table.

SWAPS

  • You can use unsweetened coconut, but it will not be as sweet and will have a slightly different texture. We recommend sweetened coconut.
  • You could swap out the lime juice and zest for lemon to make them lemon coconut macaroons.
  • You can use fresh or bottled lime juice.
  • This recipe uses sweetened condensed milk. If you don’t want to use store-bought, you can make your own with this recipe.

Ingredients
  

  • 1 (14 ounce bag) of shredded sweetened coconut
  • ΒΌ cup of flour
  • 3 tablespoons of lime juice
  • 1 (14 ounce can) of sweetened condensed milk
  • Lime zest 2-3 tablespoons divided

Instructions
 

  • Combine the coconut, flour, and 1 tablespoon of lime zest in a bowl and toss together; add lime juice and condensed milk and mix well with a spoon or spatula.
  • Use a small scoop or your hands to roll into a walnut-sized (walnut out of the shell) ball, pat down a little, and place on a lined baking sheet (we use parchment paper). Sprinkle the remaining lime zest on the macaroons.
  • Bake in a 350-degree oven for 12-15 minutes or until the bottom of the macaroons are a bit brown. Let cool and enjoy.
