Easy Pasta Salad Recipe
We love a good pasta salad anytime, and this one has quickly become a favorite. It’s full of flavor, and it’s very versatile. While many pasta salads are cream-based, this one is oil-based. It reminds me of the pasta salads my grandmother would make in the summer. She always had a homemade vinaigrette dressing made up in the refrigerator, and she seemed to pour it on everything. This easy Italian pasta salad is the perfect spring or summer side dish and fabulous for a cookout or potluck!

This salad is so versatile! Don’t like pepperoni? Then just double the salami. Feel free to add more dressing or spices! Honestly, you can’t go wrong with experimenting a bit with this one.

Easy Italian Pasta Salad
Ingredients
- 16- ounce box of elbow macaroni
- 4 ounce pkg of diced salami
- 4 ounce pk of diced prosciutto or pepperoni
- 16- ounce mozzarella balls or pearls in oil drained from oil
- 1/2 cup of olive oil
- 4 tablespoons of balsamic vinegar can add more
- 1 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 cup of grated parmesan
- handful of fresh basil
- 1 teaspoon oregano
Instructions
- Cook pasta according to the directions on the box. Drain and let cool.
- Combine the remainder of the ingredients and mix with the cooled pasta. Chill in the refrigerator for 2-3 hours before serving.
