Mini Pancake Bites

Mini Pancake Bites are so simple! Homemade pancake mix with toppings that you love made into mini muffins! Add a side of syrup, and you have a fabulous treat.

WHY WE LOVE THIS RECIPE

For one, this recipe for mini pancake bites is so versatile. You can add any toppings that your family enjoys. If you like blueberry pancakes…add blueberries! If you enjoy pecan pancakes…add pecans! Also, they reheat great. So you can make them up at the beginning of the week and have them for several mornings. Planning a special brunch or holiday gathering? These will be a big hit, plus you don’t have to sit in front of a hot griddle making pancakes all morning. Win! Win!

KEY INGREDIENTS

  • All-purpose flour
  • White granulated sugar
  • Baking soda
  • Baking powder
  • Egg
  • Vanilla extract
  • Butter, melted
  • Buttermilk or regular milk
  • Toppings…blueberries, bananas, nuts, chocolate chips, cinnamon, nutmeg, etc.
  • Maple syrup for dipping

When we say this recipe is easy…we mean it! You mix, pour into a mini muffin tin, and bake. That’s it! You can dip them in warm syrup, honey, or molasses. Shake a little powdered sugar over them for a special treat.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/4 cup white granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter melted
  • 3/4 to 1 cup buttermilk or regular milk
  • Extra butter for greasing mini muffin pan
  • Maple Syrup for dipping

Toppings or Additions

  • Bananas Blueberries, Strawberries (or any fruit you like) Chocolate chips (or any flavored chips), Ground cinnamon or ground nutmeg.

Instructions
 

  • Stir together all ingredients with a spoon. Add one scoop of batter to each muffin cup. I use an ice cream scoop for batter. Top with berries, cinnamon, or chocolate chips. (You can also add these ingredients to the batter.) Bake in a preheated 350 degree oven for 15 to 20 minutes until centers test done. Cool for 10 minutes in pan.
  • Remove and enjoy with syrup or honey. Muffin bites should freeze well and will last several days in an airtight container. Makes 2 dozen.

Notes

You can use our recipe for the pancake batter or your favorite pancake mix or biscuit mix.

FREEZING AND REHEATING

You can store them in an air-tight container for several days. They reheat fine in a microwave, and you can freeze them.

  1. Good Morning Ladies. The information concering AI invasion of the cooking website word is deeply troubling. If “they” those controlling AI (if they are human), can invade and cause problems for cooking websites, what else can be invaded and controlled?
