Ingredients

  • 1 lb of breakfast sausage
  • 1/2 cup of diced onion
  • 1/2 cup of diced green pepper
  • 2 tablespoons of minced garlic
  • 1/2 teaspoon of smoked paprika
  • 12 eggs
  • 1/2 cup of heavy whipping cream
  • 1 11.36 ounce box of Red Lobster Cheddar Bay Biscuit Mix with seasoning packet
  • 2 cups of shredded cheddar cheese divided
  • 1/4 cup of melted butter
  • 1/4 cup of chopped fresh parsley
  • salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees. Grease a 9X13 pan. Brown the sausage, onion, green pepper, minced garlic, and paprika over medium heat until cooked (about 10 minutes). Drain off any grease.
  • In a mixing bowl, whisk the eggs, whipping cream, salt, and pepper. Add in the cooked sausage, onion, and pepper and mix well.
  • In another bowl, prepare the biscuit mix according to directions.
  • Pour the egg mixture into the 9X13 baking pan. Cover with the remaining cup of cheese (the other cup is in the biscuit mix). Drop the biscuit dough over the casserole with a spoon or ice cream scoop. Place in oven and bake for 15 minutes. Mix the melted butter and the herb seasoning packet with the chopped parsley (it came with the biscuit mix) and brush over the top of the biscuits. Bake for another 15-20 minutes or until biscuits are golden brown. Test the casserole with a knife in the center. When it comes out clean, it’s done! Serve warm. You can shake a little paprika over the top when you take it out of the oven. Enjoy!
