This delicious breakfast bake is so simple! You make it with a box of Red Lobster Cheddar Bay Biscuit mix that can be easily found at most grocery stores. We know most people like to serve a breakfast casserole during the holiday, but trust us…..this one is good anytime! It comes together super quickly, and it always receives rave reviews. Oh, and if you like this dish, you may love our Cheddar Bay Biscuit Bread!
SWAPS AND ADDITIONS
If you’re not a fan of onions or green peppers, you can certainly leave them out. You could also add cooked bacon to the top or swap out the seasonings. Feel free to make this dish your own!

Cheddar Bay Biscuit Bake (Easy Breakfast Casserole)
Ingredients
- 1 lb of breakfast sausage
- 1/2 cup of diced onion
- 1/2 cup of diced green pepper
- 2 tablespoons of minced garlic
- 1/2 teaspoon of smoked paprika
- 12 eggs
- 1/2 cup of heavy whipping cream
- 1 11.36 ounce box of Red Lobster Cheddar Bay Biscuit Mix with seasoning packet
- 2 cups of shredded cheddar cheese divided
- 1/4 cup of melted butter
- 1/4 cup of chopped fresh parsley
- salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees. Grease a 9X13 pan. Brown the sausage, onion, green pepper, minced garlic, and paprika over medium heat until cooked (about 10 minutes). Drain off any grease.
- In a mixing bowl, whisk the eggs, whipping cream, salt, and pepper. Add in the cooked sausage, onion, and pepper and mix well.
- In another bowl, prepare the biscuit mix according to directions.
- Pour the egg mixture into the 9X13 baking pan. Cover with the remaining cup of cheese (the other cup is in the biscuit mix). Drop the biscuit dough over the casserole with a spoon or ice cream scoop. Place in oven and bake for 15 minutes. Mix the melted butter and the herb seasoning packet with the chopped parsley (it came with the biscuit mix) and brush over the top of the biscuits. Bake for another 15-20 minutes or until biscuits are golden brown. Test the casserole with a knife in the center. When it comes out clean, it’s done! Serve warm. You can shake a little paprika over the top when you take it out of the oven. Enjoy!

HOW TO STORE LEFTOVERS
Leftovers should be stored in an airtight container in the refrigerator. This breakfast bake will keep for 3-4 days and can easily be reheated in the oven (cover or wrap in aluminum foil and bake at 350°F until warmed through) or in the microwave.

I baked this wonderful casserole last night for dinner. Husband could not get enough of it. So easy to make! My favorite go to casserole in cold weather. Warms for breakfast next morning. Yum yum!

Any suggestions for Red Lobster mix if unavailable?
HI Beth! I would just use a regular biscuit mix and then you could add in the seasonings from this recipe. Then maybe drizzle some melted butter over the biscuits topping when it comes out of the oven.
