Hawaiian Macaroni Salad

Ingredients
  

  • 1 ½ cups of dry elbow pasta
  • 1 ½ tablespoons apple cider vinegar
  • 1 ¼ cups of grated carrots
  • ½ cup of diced celery

Dressing

  • ¾ cup of mayo
  • ¼ cup of half and half
  • 2 tablespoons of grated onion
  • 1 teaspoon light brown sugar
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Instructions
 

  • Cook pasta according to package directions, drain and mix in the apple cider vinegar. Set aside and allow to cool. In a separate bowl, mix together dressing ingredients.
  • Next combine the pasta and the salad ingredients, top with the dressing and toss evenly. Refrigerate for 2 hours, stir well before serving.

Notes

This recipe can easily be doubled for a larger group. If you're not a fan of onions, you can certainly leave them out. Feel free to add a bit more of brown sugar if you would like it sweeter. This recipe is very forgiving and you can certainly make it to your taste.
