10ouncecan of Fire Roasted tomatoes with green chiles(drained, but save juice)
1ounce packet of Ranch Dressing Mix
1ouncepacket of taco seasoning (use low-sodium)
2cupsShredded Colby-Jack cheese
Potato Chips or Tortillia chips
Instructions
Mix all ingredients (except the chips) together in a bowl and chill for 30 minutes to an hour. Serve with chips
Notes
Since the sour cream is already cold, you don't have to chill the dip; you can serve it immediately. We like to let it chill so the flavors can meld together a bit, but it's not necessary. I like to taste the dip and see if it needs a bit of the tomato juice. I added a bit back in because I feel like it really does add flavor and a kick to this dip. You can discard or add it back in, your choice!
