Ingredients

  • 16 ounce container of Sour Cream
  • 10 ounce can of Fire Roasted tomatoes with green chiles (drained, but save juice)
  • 1 ounce packet of Ranch Dressing Mix
  • 1 ounce packet of taco seasoning (use low-sodium)
  • 2 cups Shredded Colby-Jack cheese
  • Potato Chips or Tortillia chips

Instructions

  • Mix all ingredients (except the chips) together in a bowl and chill for 30 minutes to an hour. Serve with chips

Notes

Since the sour cream is already cold, you don't have to chill the dip; you can serve it immediately. We like to let it chill so the flavors can meld together a bit, but it's not necessary.
I like to taste the dip and see if it needs a bit of the tomato juice. I added a bit back in because I feel like it really does add flavor and a kick to this dip. You can discard or add it back in, your choice!
