Preheat oven to 375 and lightly spray a 9X13 baking pan with non stick spray. In a bowl combine, butter, honey, dijon mustard, salt and pepper. Slice croissants and spread this mixture on each side. Add 2-3 slices of ham, top with swiss cheese and place in baking pan. In a seperate bowl whisk together egg whites and water. Brush tops of croissants with egg mixture. Top with poppy seeds. Bake for 16-18 minutes. Serve warm.

We like an egg wash and poppy seeds on top of these sandwiches, but you certainly don't have to do it.
Any combo of deli meat/cheese works. They are delicious with turkey and cheddar.
