Preheat oven to 400 degrees.
In a saucepan on the stove, combine the water, sugar, cornstarch, cinnamon and lemon juice. Start on a low temperature and let it heat up gradually to a boil, stirring constantly. The sauce will thicken, it may take 6-8 minutes, do NOT stop stirring, it will stick.
Once the sauce has thickened, add in the apples and turn down to a simmer and let it simmer for about 8 minutes or until the apples are soft.
In a mixing bowl, using a mixer, beat together cream cheese ingredients until fluffy.
Roll out the pastry dough and cut into 12 blocks. Place each block on a parchment paper lined baking sheet. Place one tablespoon of apple mixture and one tablespoon of cream cheese to the center of each pastry. Take a knife and score the edge of each danish, about ½ inch from the edge. You don't want to cut all the way through the dough, but enough to make an indention. Brush the edges with egg wash.
Bake in preheated oven for 12-14 minutes. Combine glaze ingredients and drizzle over cooled danishes.
Store any leftovers in an air-tight container at room temperature for three days.
