Berry Angel Food Cake

Berry Angel Food Cake is so simple and the perfect spring or summer dessert!

Ingredients
  

  • 1 Angel Food Cake
  • 2 ½ cups of diced fresh strawberries
  • 1 cup of blueberries
  • 16 ounces of Cool Whip thawed
  • 1 teaspoon of Vanilla
  • 2 ½ cups of mini marshmallows

Instructions
 

  • In a mixing bowl, add diced strawberries and mash a bit with the back of a spoon to release the juices. The mix in blueberries, Cool Whip, and vanilla and mini marshmallows.
  • Cover and refrigerate for 40 minutes. Take the angel food cake and, with a serrated knife, cut it into three layers. Spread the whipped cream mixture on the bottom layer, and then add the next layer and repeat.
  • Spread the remaining cream mixture all over the cake and top with a few sliced strawberries and blueberries. Place the cake back in the refrigerator for 2 hours before serving. You could also sprinkle it with coconut or pecans too.

Notes

Don't like blueberries, but love strawberries? Just leave the blueberries out. You could easily add pecans or walnuts, or sprinkle the cake top with sweetened coconut. You could also use homemade whipped cream. However, homemade whipped cream has a different structure, and it may not set up as well, so you may want to just put it between the layers and not frost the entire cake.
